Linguini with 3 Wild Greens, Ramps, & Dandelion

It started with ramps.

Ramps are coming in so fast now that I’m wanting to harvest and eat as many as we can before they’re gone again. It’s so different when you’re eating what’s actually in season right outside your front door, rather than what’s been shipped halfway around the globe, isn’t it?

This time we took the right tools and were able to dig and cut ramps without entirely uprooting them. We left a part of the bulb and all the roots still in place and ready to grow again.

Once we had our ramps, I started looking around for more fresh greens, and found plenty of juicy chickweed (Stellaria media), some galium (aka cleavers or bedstraw), and few young leaves of rumex (the best ones are still unrolling). Finally, there were a good number of dandelion blooms that I decided to harvest for a topping to the dish I was starting to plan.

Special note: the rule is, you’re not allowed to harvest a bloom that someone else is already enjoying. The bumblebee in the photo below got there first.

When I got home, I got out some linguine and salsa and set the pasta to boil (I added a couple tablespoons of avocado oil) while I washed all my freshly-foraged wild greens.

I often trim the green base from dandelion blooms, which makes the petals a fluffy, sweet topping for nearly any dish.

I dropped the chopped ramps and foraged greens into the boiling water just before the pasta was finished, and after a minute or so, drained off the water.

I added a few strips of leftover chicken to mine, then topped it with salsa, dandelion, and chopped jalapeno. It was a lovely dinner that couldn’t possibly have been any fresher or tasted more delicious.
