Tom Yum with Chickweed and Waterleaf

I stock up on soups in the winter, and on a cold but sunny day last week I went out foraging for soup greens to go in some Tom Yum soup broth I had in the pantry.

For soups, lots of wild spring greens will work well, but we don’t have a wide variety of them yet. However, I had seen Virginia waterleaf coming up in the slough by Little Sister, so I put on my winter coat, hat, and scarf, and headed down the mountain to forage.

I passed chickweed on the Bluebell trail down into the slough, and stopped to gather some. Then, at the bottom of that trail by the knoterfall (and the three skulls), I found plenty of Virginia waterleaf to pick.

It’s hard to pick greens with gloves on, so by the time I’d finished getting these, I was ready to head upstream in order to add a few ramps to my collection, then get in out of the cold. I didn’t have a knife with me, but once I got back I cut the roots off the ramps and sent Lance out to replant them.

After washing my greens, I heated up my Tom Yum, threw in a pack of noodles, and in very short order had a nutritious soup to hold off the spring cold.
